Akatsuki is a sake of many colors. The nose, like the first rays of a new rising sun brings a first touch of bitter oranges and White Vermouth. The mouthfeeling is warm and silky and brings a tension later enhanced by its high concentration of amino-acidity which bring texture. A bit more fermented aromas then comes in play with hints of roasted cocoa and puffed rice. Finish is lasting, unveiling the last tints of an original batch.

Nami is a dry sake, ideal to drink while enjoying a meal. Its iodine taste with hints of automnal fragrances grants him a very unique flavour that differs vastly from modern sakes

A first touch of acidity for a sharp, pulpy and yet balanced sake. Its nose reveals scents of ceps, morels and candied oranges wheareas its full body unveils a iodized, bittersweet and spicy feeling. Its finish, long and persistent, slightly sodic allows it to be paired with meats, delicatessens and other typical “terroir” french foods.

Powerful, intense and dry… Kaminari is certainly a sake with a strong personality. It is a complex sake that will not be tamed that easily…

Striking First, the nose is thriling, its oxidated aromas are evoking those of macerated white wines. The mouth feeling is according : a franck and plunging taste that is straight and almost mineral. Then hints of nuts and roasted almonds are perceived with a finish on acidity and light bitterness.

Kaminari -Thunderbolt-

Kaze harmoniously combines the specific mellowness of the yamadanishiki rice variety with a pinch of acidity, resutling in a more evanescent and subtle body.

Aromas of candied peaches, of dates and almonds. The first feeling in mouth is light, discreet yet suave. Flavours of white fruits are perciptibles and the fresh and persistant finish revolves around fruity hints of peaches, cherries and elderberries. This elegant sake will harmoniously pair with white fishes, desserts or even light blue cheeses. It is our Top Batch.
